Dried bonito dashi: Contributions of mineral salts and organic acids to the taste of dashi
2019, Physiology and BehaviorCitation Excerpt :The potential for this type of cell-cell interaction has been proposed by others [24,55,62]. Also, it should be noted that the taste of the organic acid may have simply changed the taste of the salt solutions sufficiently to reduce the taste similarities they share with dried bonito dashi and the salt solution or inducing a mixture suppression effect [63–65]. However, this seems unlikely since the intensity of each organic acid, while detectable to mice, was weak, well below the intensity that induces natural avoidance.
Dietary salt and flavour: Mechanisms of taste perception and physiological controls
2019, Reducing Salt in FoodsCracking taste codes by tapping into sensory neuron impulse traffic
2008, Progress in NeurobiologyCitation Excerpt :A constant component in the oral environment is saliva, which is itself a variable formulation (Schneyer et al., 1972); and single-stimulus, self-adaptation, or multiple stimulus, cross-adaptation, control our perceptual experiences. Evaluation of peripheral taste information, which contributes to decisions to ingest or reject, adjusts to nutritional needs via receptivity to systemic signals (Contreras and Frank, 1979) and peripheral taste signaling adjusts to dangerous substances present in available sources of food and drink (Formaker and Frank, 1996). Neural activity carried to the brain by gustatory afferent neurons is malleable, reflecting a variable oral milieu, internal needs and nutrient sources.
